I believe this weekend I'm going to totally do Blackeyed Pea and Pork Gumbo (scroll down). Y'all can come have some if you want.

The three most complicated ingredients (Previously cooked blackeyed peas, bacon braised greens, and fully-smoked pork butt) are available on grocery store shelves (http://www.gloryfoods.com/index.asp) and at pretty much any barbecue restaurant in Memphis, respectively.

The rest is just patience, and a willingness to hang out in the kitchen instead of wandering off to do something else.

Mmm. I'm sad that I didn't know about Cochon when I was in NO. Sounds like a great place.
