To the purveyors of "New Orleans" cuisine in Memphis:
Gumbo does not have tomatoes in it. Neither does Jambalaya. Shrimp poboys do not stay together when you eat them, and they don't come on pre-cut sesame seed rolls sold in eight packs at the supermarket. Road beef poboys are not made of deli-sliced roast beef boiled in canned gravy. Red beans and rice is not served with cheese and sour cream on top. "Dense" and "chewy" are not the two words with which to describe begniets.
I'll forgive the raisins in the bread pudding. Lots of people make that mistake.
Love (or would be if you could cook), Fancycwabs.
